Yields: 15 cookies

The recognizable cozy spices and plump raisins make them even more irresistible. They will keep for a minumum of one week if kept in an airtight container in the refrigerator--if they last that long!

 


1 cup (100g) instant oats (gluten-free if necessary and quantified like this)

3/4 cup (90g) whole wheat or fermented * flour (measured like that )

1 1/2 teaspoon baking powder

1 1/2 tsp ground cinnamon

1/4 teaspoon salt

2 tbsp (28g) unsalted butter or olive oil, melted and cooled slightly

1/4 cup (63g) mashed banana

1 tsp vanilla extract





In a medium bowlwhisk together the oats, flour, baking powder, cinnamon, and salt. In a separate bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring just until incorporated. Fold in the raisins.

Preheat the oven to 325°F, along with a baking sheet with a silicone baking mat or parchment paper.

With a spoon and spatula, drop the cookie dough to 15 rounded scoops onto the prepared sheet, and flatten to the desired depth and width using 20 Easy and Delicious Vegan Cookie Recipes - How to Make Vegan ... a spatula. Bake at 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.

Notes: It's extremely important to quantify both the oats and flour properly utilizing this method or even a kitchen scale. (? That's the one I have and love!) Too much of either would dry from the cookies and abandon them cakey rather than chewy.
